Today I want to share with you a delicious and simple vegan recipe that works for everyone (vegan and non-vegan). The superhero of this recipe is our lovely Kale with its amazing anti-oxidant properties. Kale is also good for your immune system, your metabolism, your hydration besides protecting you against various cancers because of the high level of vitamin K. I like using Kale in my smoothies in the morning as well as in my main dishes. You may not like it straight away, but as with all food, it’s just a question of getting used to it. So let’s get started!
INGREDIENTS FOR 2 PEOPLE
- 250 g spelt pasta (egg free if you’re vegan)
- 400 g green kale
- ½ cup of almond flakes
- 1 red onion
- Handful of turmeric powder
- Olive oil or coconut oil
Boil your kale in a big pot for about 10-15 min until the leaves are softer and in the meantime boil the salty water for your pasta. Meanwhile, in another pan brown your red onion (previously chopped into little bits) with some coconut oil or olive oil (depending on what you prefer). Add your almond flakes to toast them but don’t let them burn! When the kale is ready, drain it and add it to the pan with the onion and the almond flakes. Mix everything, add salt and pepper and some turmeric and let everything stir-fry for a couple of minutes. Drain your pasta and add it to the vegetables. Before serving the meal, add a swirl of olive oil. Delicious!
