Organic spirulina pasta with broccoli soaked in soy sauce, ginger and maple syrup

We are so obsessed by spirulina and its benefits that we are looking for it everywhere! This time, when we found the pasta at the shop we couldn't ignore the sign: we need to have it in our kitchen! The taste is awesome, so delicate, definitely something that you need to try!

This recipe is very simple but at the same time it requires some patience as you need to let the broccoli resting in the soy sauce and the maple syrup for about 30 min.

  • Broccoli
  • Soy sauce
  • Maple syrup
  • Fresh ginger
  • White onion
  • Salt, pepper & chilli
  • olive oil

Leave the broccoli (you choose the quantity depending on how many people will sit at your table!) soaking in a lovely combination of soy sauce and maple syrup. Again, as you may now after reading other recipes I don't really suggest quantities as I like adding what 'feels right'. I like thinking that by trying you become more confident in the kitchen and a better chef. After 30  min, take a pan and brown the onion with some olive oil, add salt and pepper and slowly add the broccoli to the pan. Roast them slowly. At this point you can choose here to add some water or water with some vegan stock. Add the fresh ginger and again, it's you who decide the quantity. I love the taste of ginger so I am quite generous with it in my dishes. Let the broccoli cook very slow until they are tender but not too soft, you don't want to have a soup!
In the meantime boil the water for your spirulina pasta, it will be ready in about 8-9 min. When the pasta is ready, add it to the broccoli. Mix and serve. Another vegan, delicious, simple dish for your weekends!
